Down and Dirty Cooking Series: Mastering Southern Basics
Sometimes you just need to get down and dirty: to learn how to cook one thing and learn it the right way. It then becomes part of your repertoire, something you can call forth whenever you need it. With that premise in mind, Midway Kitchen has created a new (soon-to- be-famous!) series: Down + Dirty: Southern Style. We’ll focus on one type of traditional Southern food each session and really explore the foundation and principals of that food then throw in some variations once we’ve mastered the basics. Our first class will focus on a quintessential Southern staple, The Biscuit. If you’ve been around here for any length of time, you’ll know that there are lots of opinions about how biscuits should be made and how they should taste – and we’ll look at several variations once we’ve become proficient in the foundations of the incredible, delicious and flaky object of our affections.
Here’s what’s on the agenda for Biscuit Love:
Buttermilk Biscuits – mastering the basics
Angel Biscuits –sweet little yeasted delicacies
Drop Biscuits – what else are you gonna use on a pot pie?
Scones – really, just lightly sweetened biscuits cut into triangles, dried fruit optional
Shortcakes – swoon-worthy cakes for soaking up the juices from your summer fruit
