Join us for an engaging and informative demonstration-style class in collaboration with Firsthand Foods. This class is the first in a series called “Eat Less and Better Meat” – in which the Firsthand Foods team will teach helpful techniques for preparing quality pastured meat at home without the stress or breaking the bank.

During this class led by Stacey Sprenz, we will focus on cooking methods for quality pasture-raised meats, and we will dig into the following topics:

  • Braising techniques - what is the template and what are the options

  • Instant Pot pressure cooking vs. slow cooking

  • When and how to season (salt, brine, etc.)

  • Discussion of why different cuts taste and cook differently

  • The Maillard reaction

There will be a delicious tasting of the following dishes during this class: Rosemary Garlic Butter Steaks, Pork Carnitas Tacos, and Potatoes Roasted in Lard.
